Why are there 2 dippings in the PësꞋakh SeiꞋdër?
Biblical and other descriptions suggest that ordinary dinners, banquets and feasts featured a single dip, for bread. For ordinary folk and dinners, this was probably something simple like dipping their bread into a dip of olive-oil, garlic & salt; or perhaps khumꞋus. Thus, insertion of a different dip, before even serving bread, and dipping leaves instead of bread, and into a red wine vinegar rather than a tasty dip like garlic or khumꞋus dip, all flagged attention to something markedly different and unique about the dinner—and that this peculiar dip had some significant meaning.
Why must one dip with אֵזוֹב, not Καρπός (& כַּרְפַּס / "Karpas")?
While Hebrew readers will instantly recognize that אֵזוֹב derives from Tōr•ãhꞋ, English readers may not. אֵזוֹב is the "hyssop" of Ta•na"khꞋ. And אֵזוֹב is what Yi•sᵊr•ã•eilꞋ used to daub blood of the כֶּ֣בֶשׂ on their mᵊzūz•ōtꞋ so that the Egyptian soldiers, checking to ensure Par•ōhꞋ's decree to sacrifice all firstborn males was carried out, would see the relatively fresh blood, as expected, and יִפְסַח to the next house.
Why must we use אֵזוֹב?
אֵזוֹב is the cleansing applicator stipulated by Scripture (wa-Yi•qᵊr•ãꞋ 14; Tᵊhil•imꞋ 51.9), which has particular significance as Yi•sᵊr•ã•eilꞋ was weaned from animistic mammal blood gradually, in stages; first to fowl blood diluted with water, then from blood altogether (with the loss of the Beit ha-Mi•qᵊdãshꞋ and Kohanic yō•khas•inꞋ ); then to commemorative red wine vinegar. Violations of Tōr•ãhꞋ are symbolized by sᵊōr. The cleansing of sᵊōr during Khag ha-Matz•ōtꞋ, it follows, should include the commemorative daubing of commemorative red wine vinegar, by אֵזוֹב, to that which is being cleansed of sᵊōr. [Note: this insight contributed by Dr.  Yael Erlich. Full disclosure: she is the daughter of this proud Dad.]
Why must the dip be red-wine vinegar rather than salt water?
It is crystal clear from the use of אֵזוֹב and red-wine vinegar that the latter is particularly to recall and commemorate the blood of the goat or lamb daubed onto the mᵊzūz•ōtꞋ—at the Counsel of יְהוָׂה (via Mōsh•ëhꞋ Pᵊqid•einꞋū )—resulting in the פֶּסַח, by the Egyptian soldiers, of each house of an Israeli.

At the complete opposite end of the spectrum from the depiction of crying and whiny bemoaning evoked by Hellenized "spring" vegetables dipped in saltwater symbolizing "the tears of our fathers in slavery" (corvée, btw, not slavery, in point of historical fact), this dipping was intended to commemorate not the misery of hardships under the Egyptian corvée but the grim and distasteful, bitter reality of the terrible price paid by the Egyptians for the great deliverance of our forefathers by יְהוָׂה at the Yᵊtzi•ãhꞋ!

Using the אֵזוֹב to dip red-wine vinegar in the same manner as our forefathers dipped אֵזוֹב into the blood of the PësꞋakh goat/lamb then, accordingly, focuses clearly on the often repeated great prophecy: the (non-divine) Mã•shiꞋakh  of the Royal House of Dã•widꞋ as the PësꞋakh goat/lamb of Yi•sᵊr•ã•eilꞋ's deliverance; past & eternal future in the spiritual -Ō•lãmꞋ ha-Bã of Dã•widꞋ ha-MëlꞋëkh.

Orthodox rabbis have always insisted that the Mã•shiꞋakh must come before Israel can be restored. Consequently, when modern israel was restored, the rabbis insisted it cannot be a legitimate Israel. Since modern Israel was established, and thrives, without rabbinic recognition of a Mã•shiꞋakh, however, the rabbis have been forced to change course and deny the whole concept of a Mã•shiꞋakh altogether.

Rainbow Rule Everyone takes a sprig of אֵזוֹב. When everyone is ready, the MC recites:

בָּרוּךְ אַתָּה יְהוָׂה אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם, בּוֹרֵא פְּרִי הָאֲדָמָה׃

Dip the אֵזוֹב in red-wine vinegar and eat some of it.
