At the complete opposite end of the spectrum from the depiction of crying and whiny bemoaning evoked by Hellenized "spring" vegetables dipped in saltwater symbolizing "the tears of our fathers in slavery" (corvée, btw, not slavery, in point of historical fact), this dipping was intended to commemorate not the misery of hardships under the Egyptian corvée but the grim and distasteful, bitter reality of the terrible price paid by the Egyptians for the great deliverance of our forefathers by יְהוָׂה at the Yᵊtzi•ãhꞋ!
Using the אֵזוֹב to dip red-wine vinegar in the same manner as our forefathers dipped אֵזוֹב into the blood of the PësꞋakh goat/lamb then, accordingly, focuses clearly on the often repeated great prophecy: the (non-divine) Mã•shiꞋakh of the Royal House of Dã•widꞋ as the PësꞋakh goat/lamb of Yi•sᵊr•ã•eilꞋ's deliverance; past & eternal future in the spiritual hã-Ō•lãmꞋ ha-Bã of Dã•widꞋ ha-MëlꞋëkh.
Orthodox rabbis have always insisted that the Mã•shiꞋakh must come before Israel can be restored. Consequently, when modern israel was restored, the rabbis insisted it cannot be a legitimate Israel. Since modern Israel was established, and thrives, without rabbinic recognition of a Mã•shiꞋakh, however, the rabbis have been forced to change course and deny the whole concept of a Mã•shiꞋakh altogether.
בָּרוּךְ אַתָּה יְהוָׂה אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם, בּוֹרֵא פְּרִי הָאֲדָמָה׃
